Not much tonight...
Just cruisin' along and enjoying the ride. I really am looking forward to golf season this year cuz I find the waterfit is helping with all kinds of flexibility. Surely that can only help! We're going to try another waterfit class tomorrow night (Dalewood) cuz we're finding the Bennetto class too easy. Never thought I'd think that when we started.
Water consumption on track but having a harder time with the home cooking. This week I'm rushing home from work, letting the dog out, jetting to waterfit then getting home by 930 when cooking is certainly not on the agenda. Ah well, something to work on :)

ReplyDeleteRecently I made some Greek Chicken and rice. I marinaded 4 breasts, cooked and ate one, stuck another in the fridge, and the other 2 in the freezer. Then you can just bring them out the day before and cook 'em up quick. I also froze half the rice. Frozen rice ain't the best, but it makes life easy. I just wouldn't recommend letting the chicken marinade in the fridge for more than a day as they'll get a little too lemony.

ReplyDeleteI'll echo the theme of the two above, cook ahead and reheat. Have veggies chopped and stored in the fridge. Maybe get a slow cooker. Keep up the great work.
chili is the best...and lately I have gone entirely veggie or faux veggie w/ yves veggie ground meat sub...OR with 3/4 yves and 1/4 lean ground beef for the flavour but way less fat. Tons of carrots and zucchini grated in, beansbeansbeans. Let me know how to do it in the slow cooker.
ReplyDeleteAlso...fish? Frozen fillet wrapped in parchment, sprinkled w/ your choice of flavouring, cooked at high heat in under 20 minutes. But fish is not everyone s cuppa.

Actually, I just froze them raw, but cooked works too. I'm not sure "faux" and "food" should be used together, but to each their own... :)
